Korean Radish Kimchi Recipe, Korean Kimchi Recipe
Serve: 4
Ingredients:
- 600 g white radish
- 2 stalk spring onion, sliced
- 1.5 tsp salt
- 1 tsp ginger, chopped
- 1 tsp garlic, chopped
- 1 tsp dried shrimp
- 2 tsp anchovy sauce or fish sauce
- 3 tbsp red chilli powder
- 1 tsp sugar
- 3 tsp vinegar
- 2 tbsp glutinous rice flour, mix with 2 tbsp water
- 100 ml water
Procedure:
- boil 100 ml water ... stir in glutinous rice flour mixture ... form a paste
- peel radish ... cut into dice ... rub 1.5 tsp salt ... set aside
- drain away water ... pat dry radish
- add radish, spring onion, glutinous rice batter to seasoning mix
- mix well ... place in sterile jar ... keep refrigerated for a few days before serving
